Crop Profile for Asparagus in Canada – 2012 - Synopsis
Asparagus (Asparagus officinalis) is a member of the lily family (Liliaceae) and is the only cultivated vegetable in this family. It is a perennial, monocotyledonous plant grown for its tender green shoots (spears) that are harvested in the spring. Seventy percent of the asparagus grown in Canada is grown in Ontario. Asparagus is also grown in Quebec, British Columbia and Manitoba. This crop is highly prized for its delicate flavour, tender texture and for some of its ‘medicinal’ properties.
