Red meat and livestock slaughter reports

This section provides information on slaughter of livestock (cattle, calves, hogs and sheep/lamb) at federally and/or provincially inspected packing plants in Canada and the United States, along with other sectoral reports and links.

Please note:

Federally inspected slaughter data lags one week after week end. Provincially inspected slaughter data lags 1-3 months for all species except hogs. Provincially inspected hog slaughter to date is estimated then revised.

Weekly number of head and weight for cattle, calves, hogs, sheep and lamb from federally inspected slaughterhouses. Data from 1997 to present, Canada totals, is available on the Government of Canada’s Open Government Registry for chicken, turkey, ducks, geese and mature chicken.
