Check out Mustard!

Mustard is a winning crop for Canadian farmers. We export it all around the world – to Europe, the United States and Asia. Canadian mustard is in everyone's cuisine. Agriculture and Agri-Food Canada researchers are also working with the mustard growers and processors to find new uses for this hearty plant.

You just hit a homerun! You chose mustard.

[The text and the bottle of mustard both fly off screen from the top. As they leave, a field of yellow mustard appears. There is a red barn in the field. A conveyor belt is coming out the farm. On the conveyor we can see bags of mustard grain and a bottle of mustard.]

Canada is the world's largest exporter of mustard.

[fun, rhythmic background music continues]

[The scene moves off the screen to the left. It reveals a single mustard plant.]

The mustard that you put on your hot dog is made from the seeds of the amazing mustard plant.

[The mustard plant takes a bow. The mustard plant is then subjected to all the seasons that we have in Canada. The sun comes out, it starts raining, it begins to snow, etc.]

It is related to canola but is more tolerant to frost, drought, and heat than its famous cousin. Canada's northern climate is perfect for mustard. It likes cool temperatures. And it has adapted to our short growing season.

[The single mustard plant disappears and is replaced by a photo of a field of yellow mustard in the shape of the map of Canada. Three different types of mustard appear on screen.]

Canada produces three kinds of mustard: yellow, brown and oriental.

[The scene flies off screen to the top and is replaced by a cargo ship in the ocean. There is a conveyor belt going to the cargo ship. There is a sack of yellow mustard on the conveyor belt.]

The familiar yellow mustard is the mildest of the three and has the lowest oil content.

[The yellow mustard is launched onto this ship. A sack of brown mustard appears on the conveyor belt.]

Brown mustard is used in Dijon-style mustards and is blended with the yellow variety to make English mustard.

Oriental mustard provides the spicy cooking oils that are favoured in the various cuisines of Asia.

[The ocean scene disappears and is replaced by a spinning globe. Different food items that normally include mustard start orbiting the globe.]

The world loves using our mustard in its dishes. Mustard can serve as a nutritious addition to many foods.

[The globe morphs into a grain of mustard. Words begin to appear on screen to indicate the nutrients that can be found in mustard.]

Text on screen: Niacin. Calcium. Protein. Magnesium. Potassium.

It is low in calories and cholesterol-free. It's also high in protein and contains healthy amounts of minerals such as calcium, magnesium, potassium and niacin.

[The grain of mustard disappears and is replaced by a field of yellow mustard. A scientist holding test tubes is standing in the field. Text appears on screen.]

Text on screen: New varieties. Better suited to dryer climates.

Both the mustard seed industry and Agriculture and Agri-Food Canada are involved in mustard seed research. Together, we have developed new varieties that are better adapted to drier climates...

Mustard can be also used as a natural preservative in foods.
And our researchers are working in the field and laboratories to find new uses.

Mustard is a champion crop for Canadian farmers.

[A hand enters the screen and takes the bottle of mustard. We then see the bottle applying mustard on a hotdog.]

And it's an all-time favourite of Canadians at the ballpark and picnics. So put a little mustard on it!

[We now see a man holding the hotdog with mustard. Using a baseball mitt, he catches a fly baseball.]
